Oh my goodness spring has arrived!!! I am so happy to see the grass and little flowers blooming and birds chirping and to feel the warmer air!!!
Kids are starting their outdoor activities...that means my son is having three days of soccer per week...times is flying by so fast and I am running around like crazy.
This is added to my new 8 week gluten free diet which I started on April 1st which accidentally is also the day I did my taxes...so grateful those are all done.
I can tell you that going gluten free is very unique to me. I am Italian after all and I grew up with pasta and bread and all sorts of delicious desserts so I have had to do some extensive research on substitutions. My kids decided to do this with me and have already forfeited friends' cookies and desserts. My husband has had to join in by way of association and so far he's having the most difficulty in all of this which is very strange since he is Vietnamese, he did not grow up with a lot of gluten foods in his home.
It has been a little over a week since I started this new diet and I can tell you already that I have waaaay more energy and my stomach is "deflating". I also don't feel "fogged" in the afternoon so all in all I am seeing very fast results already. The only drawback is that I have to do more cooking or else we end up spending up a fortune at the store...all the gluten free and gmo free products have outrageous prices!!!
